The ten conference/banquet rooms conveniently located in our two multi-level Rancho Viejo Clubhouses, accommodate groups ranging in size from 10-100 guests. In addition, the Casa Grande Hall/Conference Center accommodates groups ranging from 40-500 (400 with dance floor) guests. Use of these facilities is not based on a rental fee, but rather, on a minimum consumption of food and beverage (e.g., Conference Center has a spending fee per every 3rd). Differences are billed as room charge. Rancho Viejo requires a $1,000.00 deposit to book the Conference Center.

The following selection of menus represents only a portion of the dishes and cuisine's available to Rancho Viejo guests. Individualized menu planning is our specialty. We welcome the opportunity to create a special menu for you. Please feel free to ask for any menu variation or special dish that might not be listed.

To insure that the proper quantity of food is prepared, Rancho Viejo requires a minimum guarantee 48 hours prior to the function. Thereafter, the count may be increased only. Should fewer guests attend, the guarantee is not received, and the original count will be used.

No food will be permitted to be brought into any public area by the patron or any of the guests. No leftover food may be removed from the premises. (Wedding cakes are allowed).

The prices listed for these menus do not include the customary 17% Service Charge and the 7.25% Texas Sales Tax applicable to all charges. These charges will be added.

All itemized food and beverage checks must be signed at the conclusion of the function. If the patron is not available or chooses not to sign, he or she accepts the billing count of the resort.

For dining, guests are seated at round tables. Rancho Viejo offers white table linens and white skirting. Other seating accommodations are available for special table arrangements, or particular requirements for head tables. Simply advise your Catering Representative of you special requests.

All types of audio/visual aids and equipment are available. Check with your Catering Representative for complete information.

Specialty and Theme Buffet menus are available upon request.

Rancho Viejo does offer white chair covering for a nominal fee. We do not individually decorate your reception because of varying tastes, but we offer suggestions through our Casa Grande Manager. Ice carvings can be arranged through your Catering Representative. Your Catering Representative can also recommend a florist to serve your social function. However, for all decorations provided by Rancho Viejo, a 17% Service charge and a 7.25% sales tax will be applied unless other arrangements have been made through our Casa Grande Manager.
